The country of Tanzania saw its first cases of HIV/AIDS in 1983; today about 1.4 million people live with the disease. A pilot project called Western Heads East (WHE) of the University of Western Ontario, Canada, sends university students to remote communities each year to educate local women on how to make yogurt with scientifically developed probiotics. Studies indicate that probiotics can improve immune cell counts, alleviate diarrhea, and lower the risk of transmission in HIV positive people.
